How To Make Spinach & Feta Falafel Bites

Ingredients
- 2 cups fresh spinach, chopped
- 1 cup canned chickpeas, rinsed and drained
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 2 tablespoons flour
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon baking powder
- Vegetable oil, for frying

In a food processor, combine the spinach, chickpeas, feta cheese, parsley, garlic, flour, cumin, coriander, salt, black pepper, and baking powder. Pulse until well combined and the mixture holds together.

Shape the mixture into small balls, about 1 inch in diameter.

Heat vegetable oil in a deep pan over medium heat. Fry the falafel balls in batches until golden brown and crispy, about 3-4 minutes per side. Remove from the oil and drain on a paper towel-lined plate.

Serve the spinach & feta falafel bites hot as an appetizer or snack. They can also be served in pita bread with tzatziki sauce for a delicious falafel sandwich.
