Ingredients

  • 1 cup mashed sweet potatoes
  • 2 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 1/4 tsp instant yeast
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup warm milk

Instructions

  1. In a large bowl, combine the mashed sweet potatoes, flour, sugar, yeast, and salt.

  2. Add melted butter and warm milk to the bowl. Mix until a dough forms.

  3. Turn the dough onto a floured surface and knead for about 5 minutes, until smooth and elastic.

  4. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.

  5. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a roll.

  6. Place the rolls on a greased baking sheet, leaving space between them for rising. Cover and let them rise for another 30 minutes.

  7. Preheat the oven to 375°F (190°C). Bake the rolls for 15 minutes, or until golden brown.

  8. Remove from the oven and let them cool on a wire rack before serving.
