Ingredients

  • 1 cup cooked and mashed sweet potatoes
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.

  2. In a large mixing bowl, combine the mashed sweet potatoes, vegetable oil, granulated sugar, brown sugar, eggs, milk, and vanilla extract. Mix well.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

  4. Gradually add the dry ingredients to the sweet potato mixture, stirring until just combined.

  5. Pour the batter into the greased loaf pan and smooth the top.

  6. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and allow the bread to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.
