How To Make Chicken, Sweet Potato & Coconut Curry

Ingredients
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 2 chicken breasts, diced
- 2 sweet potatoes, peeled and cubed
- 1 can coconut milk
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Cooked rice or naan bread (for serving)
Instructions

Heat vegetable oil in a large pot or skillet over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until fragrant and onions are translucent.

Add diced chicken breasts to the pot and cook until browned on all sides.

Stir in red curry paste, fish sauce, and brown sugar. Cook for another minute.

Add sweet potato cubes, coconut milk, and chicken broth to the pot. Season with salt and pepper to taste. Bring to a simmer and let cook for about 30 minutes or until sweet potatoes are tender.

Serve the chicken, sweet potato, and coconut curry over cooked rice or with naan bread. Garnish with fresh cilantro.
