Ingredients

  • 500g bread flour
  • 350g water
  • 100g active sourdough starter
  • 10g salt

Instructions

  1. In a large mixing bowl, combine the flour, water, and sourdough starter. Mix until a shaggy dough forms.

  2. Allow the dough to rest for 30 minutes. This helps the gluten develop.

  3. After the rest, add the salt and mix until fully incorporated.

  4. Cover the bowl with a clean kitchen towel and let the dough rise at room temperature for 2 hours.

  5. After the first rise, perform a series of stretch and folds every 30 minutes for the next hour. This strengthens the dough.

  6. Shape the dough into a round boule and place it in a proofing basket. Let it proof for 1 hour.

  7. Preheat the oven to 450°F (230°C) with a Dutch oven inside.

  8. Carefully transfer the proofed dough into the preheated Dutch oven, cover with the lid, and bake for 20 minutes.

  9. Remove the lid and bake for an additional 20-25 minutes until the bread is golden brown.

  10. Remove the bread from the oven and let it cool completely before slicing.
