How To Make Cracked Potato Salad

Ingredients
- 4 medium-sized potatoes, peeled and cubed
- 2 boiled eggs, chopped
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 tablespoon cracked black pepper
- 1/2 teaspoon salt
- 2 green onions, thinly sliced
- 1/4 cup chopped fresh parsley
Instructions

Boil the potato cubes in a pot of salted water until tender. Drain and let cool slightly.

In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, cracked black pepper, and salt.

Add the potatoes, chopped boiled eggs, green onions, and parsley to the bowl. Gently toss until well coated.

Serve immediately or refrigerate for at least 1 hour to allow the flavors to meld.
