Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tsp instant yeast
  • 1 tsp salt
  • 1 cup warm water
  • 2 tbsp olive oil
  • 1/2 cup sliced red onions
  • 1 cup grated Gruyère cheese
  • 2 tbsp fresh rosemary, chopped

Instructions

  1. In a large bowl, combine the flour, yeast, and salt. Gradually add in the warm water and olive oil, mixing until a dough forms.

  2. Turn the dough out onto a floured surface and knead for 5 minutes, or until smooth and elastic.

  3. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.

  4. Preheat the oven to 425°F (220°C).

  5. Punch down the dough and transfer it to a baking sheet lined with parchment paper.

  6. Use your fingers to stretch the dough into a large rectangle.

  7. Scatter the red onions, Gruyère cheese, and rosemary over the dough, pressing them lightly into the surface.

  8. Bake in the preheated oven for 20-25 minutes, or until the fougasse is golden brown and crisp.

  9. Allow the fougasse to cool for a few minutes before serving.
