  • 2 1/2 cups all-purpose flour
  • 1 1/2 tsp instant yeast
  • 1 tsp salt
  • 1 cup warm water
  • 1 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 sprigs fresh rosemary, leaves removed and chopped
  • Olive oil, for drizzling
  • Sea salt, for sprinkling

Instructions

  1. In a large mixing bowl, combine the flour, instant yeast, and salt. Gradually add in the warm water and mix until a dough forms.

  2. Knead the dough on a lightly floured surface for about 5 minutes, or until smooth and elastic.

  3. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.

  4. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  5. Punch down the risen dough and divide it into two equal portions.

  6. Roll out each portion into an oval shape, about 1/4 inch (0.6 cm) thick, on a lightly floured surface.

  7. Transfer the rolled dough onto the prepared baking sheet. Use a knife to make diagonal cuts on each piece, creating a lattice pattern.

  8. Place the sliced red onion, cherry tomatoes, and chopped rosemary on top of the dough, pressing them down gently.

  9. Drizzle olive oil over the fougasse and sprinkle with sea salt.

  10. Bake in the preheated oven for 20-25 minutes, or until the bread is golden brown and crispy.

  11. Remove from the oven and let it cool slightly before serving.
