Ingredients

  • 2 cups whole wheat flour
  • 1 cup oats
  • 1/2 cup ground flaxseed
  • 1/4 cup chia seeds
  • 1/4 cup honey
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 1/2 cups almond milk
  • 2 tbsp olive oil
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.

  2. In a large mixing bowl, combine the whole wheat flour, oats, ground flaxseed, chia seeds, baking powder, and salt.

  3. In a separate bowl, mix together the almond milk, honey, and olive oil.

  4. Gradually add the wet ingredients to the dry ingredients, stirring until well combined. If desired, fold in the raisins.

  5. Pour the batter into the greased loaf pan and smooth the top.

  6. Bake for 40 minutes or until the bread is golden brown and cooked through. Insert a toothpick into the center to check for doneness.

  7. Remove from the oven and let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

  8. Slice and serve the high fiber bread as desired.
