Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • pinch of salt
  • 1/4 cup brown sugar
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1/4 cup molasses
  • 1 egg, beaten
  • 1/2 cup chopped dried apricots
  • 1 tbsp crystallized ginger, chopped

Instructions

  1. Preheat oven to 350°F and grease a 9×5 inch loaf pan.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, ground ginger, cloves, and salt.

  3. In a separate bowl, whisk together brown sugar, applesauce, vegetable oil, molasses, and beaten egg.

  4. Add the dry ingredients to the wet mixture and stir until just combined. Fold in chopped apricots and crystallized ginger.

  5. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

  6. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
