Ingredients

  • 250g all-purpose flour
  • 30g sugar
  • 7g instant yeast
  • 3g salt
  • 125ml warm milk
  • 2 eggs
  • 60g unsalted butter, softened
  • 100g dried apricots, chopped
  • 2 tbsp apricot jam

Instructions

  1. In a large bowl, mix together flour, sugar, yeast, and salt.

  2. Make a well in the center and pour in warm milk and eggs. Mix until combined.

  3. Add softened butter and knead the dough on a lightly floured surface for 10 minutes until smooth and elastic.

  4. Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for 1 hour or until doubled in size.

  5. Punch down the dough and knead in the chopped apricots.

  6. Divide the dough into 4 equal portions and shape them into small brioche buns.

  7. Place the buns on a baking sheet lined with parchment paper, cover, and let them rise for another 30 minutes.

  8. Preheat the oven to 180°C (350°F). Brush the buns with apricot jam and bake for 20-25 minutes or until golden brown.

  9. Remove from the oven and let them cool before serving.
