Cauliflower Pizza Crust Recipe

How To Make Cauliflower Pizza Crust

This cauliflower pizza crust is a healthy alternative to the usual carb-heavy pizza crust made with light and crunchy cauliflower instead of white flour.

Serves:

Ingredients

  • lbcauliflower head
  • ¼cupparmesan,finely shredded
  • ¼cupmozzarella,finely shredded
  • ¼tspsalt
  • 1egg,large
  • 1garlic clove,minced

For Optional Toppings:

  • ½cuphomemade pizza sauce,or store-bought, or more or less to taste
  • cupsmozzarella,shredded
  • grape tomatoes,or fresh basil or oregano, olives, mushrooms, etc

Instructions

  1. Place a pizza stone in the oven and preheat the oven to 450 degrees F. Spray a large piece of parchment paper with non-stick baking spray and set aside.

  2. Wash cauliflower, cut off florets, dry thoroughly, and add half of the cauliflower to the food processor and process until finely chopped for about 30 seconds. Transfer chopped cauliflower to a microwave-safe bowl.

  3. Add the remaining cauliflower to the food processor and again, process until finely chopped for about 30 seconds. Add that cauliflower to bowl with other cauliflower.

  4. Cover bowl with microwave-safe plastic wrap and heat cauliflower in the microwave for 4 minutes on high power. Pour cooked cauliflower onto a clean tea towel and allow to cool.

  5. Once cauliflower is cool enough to handle, wrap cauliflower in a tea towel and wring moisture from the cauliflower.

  6. Return strained cauliflower to a bowl, add parmesan and mozzarella cheese, salt, egg, and garlic, and toss mixture with your hands until evenly combined.

  7. Pat mixture into an even round, about 11- to 12-inches on a prepared parchment paper.

  8. Using a pizza peel, transfer crust on parchment to the pizza stone in the oven and bake for 9 to 11 minutes until golden brown.

  9. Remove from oven and top with pizza sauce, mozzarella, and desired toppings.

  10. Return to oven and bake for 5 to 7 minutes longer until cheese has melted and is slightly golden. Allow to cool for several minutes then cut into wedges. Serve warm.
