  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/2 cup melted butter
  • 1/4 cup honey
  • 1 jalapeno, seeded and diced
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C). Grease a 9-inch square baking dish.

  2. In a large bowl, combine cornmeal, flour, baking powder, and salt.

  3. In a separate bowl, whisk together buttermilk, melted butter, and honey.

  4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in diced jalapeno and shredded cheddar cheese.

  5. Pour the batter into the prepared baking dish and smooth the top.

  6. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

  7. Allow to cool slightly before serving.
