How To Make Red Bell Pepper and Quinoa Salad

A refreshing salad packed with protein and veggies!

Serves:

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 red bell peppers, chopped
  • 1/2 red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa and add to a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for 20 minutes.

  2. In a large bowl, mix chopped red bell peppers, red onion, and parsley.

  3. In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.

  4. Add cooked quinoa and dressing to the bowl of veggies and mix well.

  5. Serve chilled and enjoy!
