How To Make Red Bell Pepper and Quinoa Salad
A refreshing salad packed with protein and veggies!

Ingredients
- 1 cup quinoa
- 2 cups water
- 2 red bell peppers, chopped
- 1/2 red onion, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
Instructions

Rinse quinoa and add to a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for 20 minutes.

In a large bowl, mix chopped red bell peppers, red onion, and parsley.

In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.

Add cooked quinoa and dressing to the bowl of veggies and mix well.

Serve chilled and enjoy!
