How To Make Ground Chicken and Quinoa Salad Recipe

Ingredients

  • 1 cup quinoa
  • 1 pound ground chicken
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions and set aside to cool.

  2. Brown ground chicken in a skillet over medium-high heat until fully cooked.

  3. In a large bowl, mix together cooked quinoa, ground chicken, bell peppers, cucumber, red onion, parsley, mint, olive oil, red wine vinegar, salt, and pepper.

  4. Serve immediately or chill in the refrigerator until ready to serve.
