Ingredients

  • 2 lbs brisket
  • 1 cup pomegranate juice
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary

Instructions

  1. Preheat the oven to 325°F (163°C).

  2. In a bowl, mix together the pomegranate juice, brown sugar, garlic, salt, black pepper, thyme, and rosemary.

  3. Place the brisket in a roasting pan and pour the pomegranate mixture over it.

  4. Arrange the onion slices on top of the brisket.

  5. Cover the pan tightly with foil.

  6. Bake for 3 hours, or until the brisket is tender and easily pulls apart with a fork.

  7. Remove the foil and broil for 2-3 minutes to caramelize the top.

  8. Let the brisket rest for 10 minutes before slicing.

  9. Serve with the remaining juices from the pan.
