Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 2 potatoes, peeled and diced
  • 1 cup beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp butter, cold and cubed
  • 1/2 cup milk

Instructions

  1. In a large pot, heat some oil over medium-high heat. Add the beef cubes and brown them on all sides.

  2. Add the onion, carrots, celery, and garlic to the pot and cook for 5 minutes until slightly softened.

  3. Stir in the potatoes, beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours until the beef is tender.

  4. In a mixing bowl, combine the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.

  5. Drop spoonfuls of the dumpling batter onto the simmering stew. Cover and cook for an additional 15 minutes until the dumplings are cooked through.

  6. Serve the beef stew and dumplings hot, garnished with fresh parsley if desired.
