Serves:
Ingredients
- 500g beef, cut into cubes
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp garam masala
- 1 cup coconut milk
- 1 cup beef broth
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
-
Heat the vegetable oil in a large pan or Dutch oven over medium heat. Add the onions, garlic, and ginger, and sauté until they become fragrant and translucent.
-
Add the beef cubes to the pan and brown them on all sides. This will add flavor to the curry.
-
Add the tomatoes and spices (curry powder, turmeric, cumin, coriander, and garam masala) to the pan. Stir well to coat the beef and vegetables with the spices.
-
Pour in the coconut milk and beef broth. Season with salt and pepper to taste.
-
Reduce the heat to low, cover the pan, and let the curry simmer for about 2 hours, or until the beef is tender and the flavors have melded together.
-
Serve the beef curry hot, garnished with fresh cilantro. It pairs well with steamed rice or naan bread.
