Ingredients

  • 1 1/2 lbs beef chuck, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1 can coconut milk
  • 1 tbsp vegetable oil
  • Salt and pepper, to taste
  • Chopped cilantro and lime wedges, for garnish

Instructions

  1. In a large pot or Dutch oven, heat oil over medium-high heat. Add beef and cook until evenly browned.

  2. Add onion, garlic, and ginger. Sauté until onion is softened.

  3. Add curry powder, cumin, coriander, turmeric, salt, and pepper. Stir to combine.

  4. Pour in coconut milk and bring to a boil. Reduce heat to low, cover, and simmer for 2 hours or until beef is tender.

  5. Adjust seasoning to taste. Serve hot with rice, garnished with cilantro and lime wedges.
