How To Make Beef & Beetroot Curry

Ingredients
- 500g beef, cut into cubes
- 2 beetroots, peeled and diced
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 thumb-sized ginger, grated
- 2 tomatoes, diced
- 2 tbsp curry powder
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro, for garnish
- Cooked rice or naan bread, for serving
Instructions

Heat oil in a large pot or Dutch oven over medium heat. Add the onions and cook until translucent.

Add the garlic and ginger, cook for another minute until fragrant.

Add the beef cubes and cook until browned on all sides.

Stir in the curry powder, turmeric powder, cumin powder, and coriander powder. Cook for a minute to toast the spices.

Add the diced tomatoes and cook until they start to break down and release their juices.

Add the diced beetroot and coconut milk. Stir well to combine.

Reduce the heat to low, cover the pot, and let it simmer for about 1 hour or until the beef is tender and the flavors have melded together.

Season with salt to taste.

Garnish with fresh cilantro.

Serve the Beef & Beetroot Curry over cooked rice or with naan bread.
