Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes

  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 4 cups beef broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • salt and pepper, to taste

Instructions

  1. Heat the oil in a large pot over medium-high heat.

  2. Add the beef and cook until browned on all sides.

  3. Add the onion and garlic and cook until softened.

  4. Add the carrots, celery, beef broth, bay leaf, and thyme.

  5. Bring to a simmer and cook for 2 hours, stirring occasionally, until the beef is tender.

  6. Season with salt and pepper to taste.

  7. Remove bay leaf before serving.
