Ingredients

  • 1 lb beef chuck roast, cut into small pieces
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 cups chopped carrots
  • 3 cloves garlic, minced
  • 2 cups gluten-free beef broth
  • 1 tbsp tomato paste
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 bay leaf
  • 2 cups diced potatoes
  • 2 cups chopped kale

Instructions

  1. In a slow cooker, mix together beef, onion, celery, carrots, garlic, beef broth, tomato paste, thyme, salt, pepper, and bay leaf.

  2. Cook on low for 6 hours.

  3. Add potatoes and kale, and cook for an additional 30 minutes.

  4. Serve hot and enjoy!
