Ingredients
- 1 lb beef chuck roast, cut into small pieces
- 1 cup chopped onion
- 1 cup chopped celery
- 2 cups chopped carrots
- 3 cloves garlic, minced
- 2 cups gluten-free beef broth
- 1 tbsp tomato paste
- 2 tsp dried thyme
- 1 tsp salt
- 1 tsp black pepper
- 1 bay leaf
- 2 cups diced potatoes
- 2 cups chopped kale
Instructions

In a slow cooker, mix together beef, onion, celery, carrots, garlic, beef broth, tomato paste, thyme, salt, pepper, and bay leaf.
