How To Steam Dhokla In Oven

- Chopped coriander leaves for garnish
Instructions:
- Mix the gram flour, semolina, yogurt, ginger-chili paste, lemon juice, and salt in a bowl. Add water little by little to make a smooth batter. Let the batter rest for 15-20 minutes.
- Preheat the oven to 375°F (190°C) and grease a baking dish or cake tin.
- Just before pouring the batter, add fruit salt to the batter and mix well. You will notice it becomes frothy.
- Pour the batter into the greased dish and tap it gently to even out the surface.
- Place the dish in the preheated oven and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- While the dhokla is baking, prepare the tempering. Heat oil in a small pan and add mustard seeds. Once they start spluttering, add curry leaves and green chilies. Sauté for a minute and then add sugar and water. Let it simmer for a minute or two.
- After removing the dhokla from the oven, pour the tempering evenly on top of it.
- Garnish with chopped coriander leaves and let it cool for a few minutes.
- Cut the dhokla into square or diamond-shaped pieces and serve with mint chutney or tamarind chutney.
