  • 1 ½ cups warm water
  • 1 tbsp sugar
  • 2 tsp active dry yeast
  • 4 ¼ cups all-purpose flour
  • 2 tsp salt
  • ¼ cup baking soda
  • Coarse salt, for topping

Instructions

  1. In a large mixing bowl, combine warm water and sugar. Sprinkle yeast over the mixture and let it sit for 5 minutes until frothy.

  2. Add flour and salt to the yeast mixture. Mix well until the dough forms a ball. Knead the dough for about 5 minutes until smooth and elastic.

  3. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

  4. Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.

  5. Punch down the dough and divide it into 8 equal pieces. Roll each piece into a rope about 20 inches long. Shape the rope into a pretzel by making a loop, crossing the ends over each other, and pressing them onto the bottom of the pretzel.

  6. In a large saucepan, bring 8 cups of water to a boil. Add baking soda and stir until dissolved. Working with one pretzel at a time, carefully drop it into the boiling water for about 30 seconds, then remove it using a slotted spoon and transfer it to the prepared baking sheet. Sprinkle with coarse salt.

  7. Bake the pretzels in the preheated oven for 12-15 minutes or until golden brown.

  8. Serve the Bavarian Pretzels warm with mustard or cheese sauce.
