  • 1 cup rolled oats
  • 4 tbsp peanut butter
  • 8 dates, pitted and chopped
  • 2 cups almond milk
  • 1 tsp vanilla extract
  • 1 tbsp honey (optional)
  • 1/4 cup crushed peanuts (for garnish)

Instructions

  1. In a medium bowl, mix together the oats, peanut butter, dates, almond milk, and vanilla extract.

  2. Divide the mixture equally into 4 serving pots or jars.

  3. Cover and refrigerate overnight or for at least 4 hours until the oats are soft and have absorbed the liquid.

  4. Before serving, drizzle with honey (if desired) and sprinkle with crushed peanuts.
