  • 8 ounces of baked tortilla chips
  • 1 cup of reduced-fat shredded cheese
  • 1 cup of black beans, drained and rinsed
  • 1/2 cup of diced tomatoes
  • 1/2 cup of sliced jalapenos
  • 1/4 cup of chopped cilantro
  • Salsa and light sour cream, for serving

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Arrange the tortilla chips on a baking sheet in a single layer.

  3. Sprinkle the shredded cheese evenly over the chips.

  4. Scatter the black beans, diced tomatoes, and sliced jalapenos over the cheese.

  5. Bake in the preheated oven for about 10-15 minutes, or until the cheese has melted and the nachos are heated through.

  6. Remove from the oven and sprinkle with chopped cilantro.

  7. Serve immediately with salsa and light sour cream.
