How To Make Easy Healthy Falafels

Ingredients
- 2 cups cooked chickpeas
- 1 small onion, finely chopped
- 3 cloves of garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon baking soda
- 2 tablespoons flour
- 2 tablespoons olive oil
Instructions

In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and baking soda. Pulse until well combined but still slightly chunky.

Transfer the mixture to a bowl and stir in the flour until the mixture holds together.

Shape the mixture into small patties or balls.

Heat the olive oil in a large skillet over medium heat.

Cook the falafels in the skillet for about 2-3 minutes on each side until golden brown and crispy.
