  • 2 large cucumbers
  • 4 oz smoked salmon
  • 1/2 cup sour cream
  • 2 tbsp chopped fresh dill
  • 1 tbsp lemon juice
  • salt and pepper to taste

Instructions

  1. Cut the cucumbers into 1-inch thick slices. Use a melon baller or teaspoon to scoop out the center, creating a cup shape.

  2. In a bowl, mix together the sour cream, chopped dill, lemon juice, salt, and pepper.

  3. Fill each cucumber cup with a small spoonful of the dill cream mixture.

  4. Top each cup with a piece of smoked salmon.

  5. Garnish with additional dill, if desired.
