How To Make Watermelon Pickles

Ingredients
- 4 cups watermelon, diced
- 1 cup white vinegar
- 1 cup water
- 1/2 cup granulated sugar
- 1 tbsp salt
- 1 tsp mustard seeds
- 1/2 tsp red pepper flakes
- 1/4 tsp turmeric
Instructions

In a large pot, combine vinegar, water, sugar, salt, mustard seeds, red pepper flakes, and turmeric. Bring to a boil.

Add diced watermelon to the pot and cook for 5 minutes, stirring occasionally.

Remove from heat and let the watermelon sit in the pickling liquid for 10 minutes.

Transfer the pickles and liquid to a jar and let cool.

Once cooled, refrigerate for at least 2 hours before serving.
