Ingredients

  • 8 oz Velveeta cheese, cut into cubes
  • 1/2 lb spicy sausage
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1/2 cup sour cream
  • 1/4 cup sliced green onions, for garnish

Instructions

  1. In a large skillet, cook the spicy sausage over medium heat until browned. Remove from the skillet and drain excess grease.

  2. In the same skillet, sauté the diced onion and minced garlic until fragrant and translucent.

  3. Add the cooked sausage back into the skillet, along with the diced tomatoes with green chilies. Cook for an additional 2-3 minutes.

  4. Reduce the heat to low and stir in the Velveeta cheese. Cook until the cheese is completely melted and the dip is smooth and creamy.

  5. Stir in the sour cream until well combined.

  6. Transfer the dip to a serving dish and garnish with sliced green onions.

  7. Serve hot with tortilla chips or your favorite dipping crackers.
