Ingredients

  • 1 pound tomatillos, husked and rinsed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • Salt to taste

Instructions

  1. In a medium saucepan, bring water to a boil. Add the tomatillos and cook for 5 minutes until softened. Drain and let cool.

  2. In a blender or food processor, combine the cooked tomatillos, onion, garlic, jalapeno, cilantro, lime juice, and salt. Blend until smooth.

  3. Taste and adjust seasoning if needed. Serve chilled or at room temperature.
