  • 3 large onions, thinly sliced
  • 2 tablespoons of butter
  • 2 tablespoons of all-purpose flour
  • 2 cups of vegetable or chicken stock
  • 1 teaspoon of sugar
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook until they are soft and caramelized, about 15-20 minutes.

  2. Stir in the flour and cook for an additional 2 minutes.

  3. Gradually whisk in the stock, making sure there are no lumps.

  4. Add the sugar, salt, and pepper. Reduce the heat to low and simmer for 10 minutes, or until the sauce thickens.

  5. Remove from heat and let it cool slightly.

  6. Use a blender or immersion blender to blend the sauce until smooth.

  7. Return the sauce to low heat and cook for an additional 5 minutes, or until heated through.

  8. Serve the onion sauce warm over your desired dish.
