Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (7 oz) chipotle peppers in adobo sauce, chopped
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.

  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.

  3. Stir in the diced tomatoes, tomato sauce, kidney beans, chipotle peppers, chili powder, cumin, smoked paprika, salt, and pepper.

  4. Bring the chili to a boil, then reduce heat and let it simmer for 1 hour, stirring occasionally.

  5. Serve hot with your choice of toppings.
