Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1 tsp chipotle powder
  • Salt and pepper to taste
  • Flour tortillas
  • For Lime Crema:
  • 1/2 cup sour cream
  • 1 lime, juiced
  • 1/4 tsp salt

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.

  2. Add sliced onions and peppers to the skillet and sauté for 3-5 minutes until they are tender.

  3. Add minced garlic and cook for 1 minute.

  4. Add the shrimp to the skillet and cook for 2-3 minutes until they are pink and cooked through.

  5. Add cumin, chili powder, smoked paprika, chipotle powder, salt, and pepper to the skillet.

  6. In a small bowl, combine sour cream, lime juice, and salt.

  7. Warm flour tortillas.

  8. Spoon the shrimp mixture onto warm flour tortillas and top with lime crema.

  9. Serve and enjoy!
