Ingredients

  • 1 lb elk meat, diced
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeno pepper, seeded and diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the elk meat and cook until browned.

  2. Add the onion, garlic, bell pepper, and jalapeno pepper to the pot. Cook until the vegetables are softened.

  3. Stir in the diced tomatoes, kidney beans, black beans, beef broth, chili powder, cumin, paprika, oregano, salt, and pepper.

  4. Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, stirring occasionally.

  5. Serve hot with optional toppings like shredded cheese, sour cream, and chopped green onions.
