Ingredients

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/2 cup roasted red peppers (from a jar)
  • 2 cloves of garlic
  • 3 tbsp tahini
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • Salt to taste
  • Optional toppings: olive oil, paprika, chopped parsley

Instructions

  1. In a food processor, combine the chickpeas, roasted red peppers, garlic, tahini, lemon juice, olive oil, cumin, and salt.

  2. Process until smooth and creamy, scraping down the sides as needed.

  3. Taste and adjust the seasoning if necessary.

  4. Transfer the hummus to a serving bowl and drizzle with olive oil. Sprinkle with paprika and chopped parsley if desired.

  5. Serve with pita bread, vegetables, or crackers.
