Ingredients

  • 1/2 cup white wine
  • 1/4 cup white wine vinegar
  • 2 shallots, finely chopped
  • 1/2 cup cold unsalted butter, cut into cubes
  • salt, to taste
  • freshly ground black pepper, to taste
  • lemon juice, to taste
  • chopped fresh parsley, for garnish

Instructions

  1. In a small saucepan, combine the white wine, white wine vinegar, and shallots. Place over medium heat and simmer until the liquid has reduced to about 2 tablespoons.

  2. Reduce the heat to low and slowly whisk in the cold butter, a few cubes at a time, until the sauce is smooth and creamy.

  3. Season with salt, pepper, and lemon juice to taste. If the sauce is too thick, you can thin it out with a little warm water.

  4. Serve the beurre blanc sauce immediately, drizzled over fish or poultry. Garnish with chopped fresh parsley.
