Ingredients
- 1/2 cup white wine
- 1/4 cup white wine vinegar
- 2 shallots, finely chopped
- 1/2 cup cold unsalted butter, cut into cubes
- salt, to taste
- freshly ground black pepper, to taste
- lemon juice, to taste
- chopped fresh parsley, for garnish
Instructions

In a small saucepan, combine the white wine, white wine vinegar, and shallots. Place over medium heat and simmer until the liquid has reduced to about 2 tablespoons.

Reduce the heat to low and slowly whisk in the cold butter, a few cubes at a time, until the sauce is smooth and creamy.

Season with salt, pepper, and lemon juice to taste. If the sauce is too thick, you can thin it out with a little warm water.
