How To Make Sweet Potato and Kale Salad
A healthy and flavorful salad with a balance of sweet and savory flavors.

Ingredients
- 2 medium-sized sweet potatoes, peeled and cut into small cubes
- 1 bunch kale, washed and torn into bite-sized pieces
- 1/2 red onion, thinly sliced
- 1/2 cup chopped walnuts
- 1/4 cup dried cranberries
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp dijon mustard
- 1 tbsp apple cider vinegar
- Salt and black pepper to taste
Instructions

Preheat oven to 400°F. Toss sweet potato cubes with 1 tbsp olive oil and salt. Spread in a single layer on a baking sheet and roast for 25-30 minutes or until tender and golden.

In a large bowl, whisk together remaining olive oil, honey, dijon mustard, apple cider vinegar, salt, and black pepper.

Add kale, sweet potatoes, red onion, walnuts, and cranberries to the bowl. Toss gently to coat with the dressing.

Serve chilled or at room temperature.
