How To Make Mushroom and Herb Stuffing Recipe

Ingredients

  • 1 loaf of bread, diced
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup vegetable broth

Instructions

  1. Preheat oven to 375°F.

  2. Spread the diced bread on a baking sheet and bake for 10 minutes or until lightly toasted. Set aside.

  3. In a large skillet, heat olive oil over medium heat.

  4. Add onions and garlic and sauté for 3 minutes.

  5. Add mushrooms and continue cooking for 5-7 minutes, until mushrooms are tender.

  6. Add thyme, parsley, salt, and pepper and cook for 1-2 more minutes.

  7. In a large bowl, mix together the toasted bread and mushroom mixture.

  8. Pour vegetable broth over the mixture and stir until well combined.

  9. Transfer to a 9×13 baking dish and bake for 25-30 minutes, until golden brown.
