Ingredients

  • 1 cup of yellow cornmeal
  • 1 cup of all-purpose flour
  • 2 tbsp of sugar
  • 1 tsp of baking powder
  • 1 tsp of baking soda
  • 1 tsp of salt
  • 1 tsp of dried thyme
  • 1 tsp of dried sage
  • 2 eggs
  • 1 1/2 cups of buttermilk
  • 1/4 cup of vegetable oil
  • Non-stick cooking spray

Instructions

  1. Preheat waffle iron according to manufacturer’s instructions.

  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, salt, thyme, and sage until well combined.

  3. In a separate bowl, whisk the eggs, buttermilk, and vegetable oil until well combined.

  4. Gradually pour the egg mixture into the dry ingredients, whisking until smooth and well combined.

  5. Spray the waffle iron with non-stick cooking spray.

  6. Pour batter into each section of the waffle iron, and cook according to manufacturer’s instructions, until golden brown.

  7. Serve immediately while hot with butter and syrup.
