How To Make Grilled Vegetable Kabobs Recipe

Ingredients

  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 red onion, diced
  • 8 cherry tomatoes
  • 8 skewers
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • salt and pepper to taste

Instructions

  1. Soak skewers in water for at least 30 minutes before grilling.

  2. Preheat grill to medium heat.

  3. Thread vegetables onto skewers in alternating order.

  4. In a small bowl, mix together olive oil, garlic, salt and pepper.

  5. Brush mixture evenly over kabobs.

  6. Grill kabobs for 12-15 minutes, turning occasionally, until vegetables are tender.

  7. Serve hot.
