How To Make Pumpkin Spice Cookies Recipe

Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/2 cup pumpkin puree
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions

Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and spices.

In a large bowl, using an electric mixer, cream together butter and sugar until light and fluffy.

Beat in the pumpkin puree, egg, and vanilla extract until well combined.

Gradually add in the flour mixture and mix until just combined.

Fold in the chopped walnuts, if using.

Using a cookie scoop or spoon, drop balls of dough onto prepared baking sheet, spacing them about 2 inches apart.
