How To Make Pumpkin Spice Cookies

Delightful, warm and cozy pumpkin spice cookies that melt in your mouth!

Ingredients

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ⅓ cup unsalted butter, at room temperature
  • ¾ cup granulated sugar
  • ½ cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together flour, baking powder, cinnamon, ginger, nutmeg, and cloves.

  3. In a separate bowl, beat butter and granulated sugar until fluffy.

  4. Add pumpkin puree, egg, and vanilla extract and mix well.

  5. Stir in the dry ingredients until just combined.

  6. Using a cookie scoop (1 tbsp), drop dough onto the prepared baking sheet.

  7. Bake for 12-15 minutes, until lightly browned and firm.

  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

  9. Dust with powdered sugar before serving.
