How To Make Easter Lamb and Feta Salad

Ingredients
- 12 oz lamb leg steaks, sliced
- 5 oz mixed salad greens
- ½ small red onion, thinly sliced
- ½ cucumber, sliced
- 2 oz feta cheese, crumbled
- 2 tbsp chopped fresh mint
- 1 tbsp chopped fresh parsley
- 2 tbsp extra-virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper, to taste
Instructions

Preheat a grill or grill pan over high heat. Season the lamb slices with salt and pepper. Grill for 3-4 minutes per side, until cooked to your liking.

In a large bowl, toss together the salad greens, red onion, cucumber, feta cheese, fresh herbs, olive oil, and lemon juice.

Arrange the grilled lamb over the top of the salad and serve immediately.
