How To Make Lemon Poppy Seed Easter Cookies

Ingredients
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/2 tsp vanilla extract
- 1 egg
- 1 tbsp lemon zest
- 1 tbsp fresh lemon juice
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tbsp poppy seeds
Instructions

Preheat oven to 375°F. Line a baking sheet with parchment paper.

In a mixing bowl, beat butter, sugar, and vanilla extract until light and fluffy.

Add egg, lemon zest, and lemon juice; mix well.

Combine flour, baking soda, baking powder, and salt in a separate bowl. Gradually add to the butter mixture.

Stir in poppy seeds.

Drop dough by tablespoonfuls onto the prepared baking sheet, leaving 2 inches between each cookie.

Bake for 10-12 minutes or until the edges are lightly browned.
