  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 tbsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp poppy seeds

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.

  2. In a mixing bowl, beat butter, sugar, and vanilla extract until light and fluffy.

  3. Add egg, lemon zest, and lemon juice; mix well.

  4. Combine flour, baking soda, baking powder, and salt in a separate bowl. Gradually add to the butter mixture.

  5. Stir in poppy seeds.

  6. Drop dough by tablespoonfuls onto the prepared baking sheet, leaving 2 inches between each cookie.

  7. Bake for 10-12 minutes or until the edges are lightly browned.

  8. Cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
