Ingredients

  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 2/3 cup evaporated milk
  • 2 cups semi-sweet chocolate chips
  • 1 tsp vanilla extract
  • 3/4 cup shelled pistachios, roughly chopped
  • pinch of salt

Instructions

  1. Line an 8-inch square baking dish with parchment paper. Set aside.

  2. In a medium saucepan, combine sugar, butter, and evaporated milk. Cook over medium heat, stirring constantly, until mixture comes to a boil.

  3. Continue cooking and stirring for 5 minutes until thickened and bubbly.

  4. Remove from heat, add chocolate chips, vanilla extract, and salt. Stir until chocolate chips are melted and everything is well combined.

  5. Stir in chopped pistachios.

  6. Pour mixture into prepared dish and smooth it out.

  7. Refrigerate for at least 2 hours, or until firm.

  8. Cut into squares and serve.
