How To Make Rosemary-Stuffed Collar of Bacon with Parsley Butter Sauce

Ingredients
- 1 collar of bacon, boneless
- 4 sprigs of fresh rosemary
- 1/2 cup unsalted butter, softened
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions

Preheat the oven to 350°F (175°C).

Lay the bacon collar flat and season with salt and pepper.

Place the rosemary sprigs evenly on top of the bacon.

Roll the bacon collar tightly and secure with kitchen twine.

Place the bacon collar on a baking sheet and roast in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (74°C).

While the bacon is cooking, prepare the parsley butter sauce. In a small bowl, mix together the softened butter and chopped parsley until well combined. Season with salt and pepper to taste.

Remove the bacon collar from the oven and let it rest for 10 minutes before slicing.

Serve the sliced bacon collar with a drizzle of the parsley butter sauce.
