How To Make Mustard Pork Fillet with Apple Lentils & Herb Aioli

Serves:

Ingredients

  • 4 pork fillets
  • 2 tbsp Dijon mustard
  • 1 tbsp wholegrain mustard
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup lentils, cooked
  • 1 apple, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 1/2 cup mayonnaise
  • 1 clove of garlic, minced
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, mix together the Dijon mustard, wholegrain mustard, olive oil, salt, and pepper.

  3. Rub the mustard mixture all over the pork fillets and place them on a baking sheet lined with parchment paper.

  4. Roast the pork fillets in the preheated oven for 20-25 minutes or until cooked through, flipping them halfway.

  5. In the meantime, prepare the lentils by combining the cooked lentils, diced apple, parsley, and chives in a bowl. Season with salt and pepper to taste.

  6. For the herb aioli, mix together the mayonnaise, minced garlic, and lemon juice in a separate bowl.

  7. Once the pork fillets are cooked, let them rest for a few minutes before slicing.

  8. Serve the sliced pork fillets with the apple lentils and top with a spoonful of herb aioli.

  9. Enjoy!
