Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 3 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1 cup sour cherries, pitted
- 1/2 cup green olives
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Heat olive oil in a large skillet over medium heat. Season the chicken thighs with salt and pepper, then add them to the skillet skin-side down. Cook for about 5-6 minutes or until golden brown. Flip the chicken thighs and cook for another 5 minutes. Remove them from the skillet and set aside.

In the same skillet, add the sliced onion and minced garlic. Cook for about 3-4 minutes until the onion is soft and translucent.

Add the ground cumin, coriander, and cinnamon to the skillet. Stir well to coat the onion and garlic with the spices.

Add the sour cherries, olives, and chicken broth to the skillet. Stir gently to combine everything. Bring the mixture to a simmer.

Return the chicken thighs to the skillet, placing them on top of the cherry and olive mixture. Cover the skillet with a lid and let the chicken cook for about 25-30 minutes or until cooked through.

Remove the lid and let the sauce reduce for a few minutes until slightly thickened.

Serve the Moroccan-style chicken with sour cherries and olives hot, garnished with fresh cilantro.
