Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 large carrot, grated
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, mix together the chickpeas, red bell pepper, red onion, and carrot.

  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.

  3. Pour the dressing over the chickpea mixture and toss to coat.

  4. Add the fresh parsley and mint and toss again.

  5. Serve cold.
